José Pizarro’s recipe for pumpkin and spinach with pimenton
I grew up with the taste of pimentón de la vera, the smoky, fiery spice Spain embraced from the New World and made its own.Pimentón gives our food its soul.One of the dishes everyone loves back home is espinacas con garbanzos (spinach and chickpeas), which is it’s simple, nourishing and full of comfort.At this time of year, however, when the markets are overflowing with sweet pumpkins, I love adding them to the mix, too.Their gentle, autumnal sweetness lifts the spinach and chickpeas beautifully, and they combine to create a dish that we’ve been serving all month at my restaurant Lolo in south-east London.
Prep 10 minCook 50 min Serves 4-61kg pumpkin, deseeded and cut into large cubes3 tbsp olive oil1 tsp smoked sweet pimentón, or paprika1 tsp cumin seeds Salt and black pepper3 fat garlic cloves, peeled and finely sliced500g baby spinach400g tin chickpeas, drained and rinsedHeat the oven to 210C (190C fan)/410F/gas 6½.Tumble the pumpkin into a large roasting tin and toss with two tablespoons of oil, the pimentón and the cumin seeds.Season well, then roast for 40 minutes, turning once or twice, until golden, tender and slightly caramelised.Heat the remaining tablespoon of oil in a large pan, then gently fry the garlic until it’s aromatic.Add the spinach and leave to wilt, then cook until practically all of the moisture has evaporated.
Toss the roast pumpkin and the chickpeas into the pan to heat through, then check the seasoning.Serve hot or at room temperature as a light lunch or as a side dish alongside some roast meat.
Ofcom criticises O2 for going ‘against the spirit’ of new pricing rules

Apple reported its first quarterly earnings since the release of its new lineup of iPhones on Thursday, beating Wall Street analysts’ expectations. The company showed steady financial growth and a strong bottom line despite slow progress on artificial intelligence. Amazon reports strongest cloud growth since 2022 after major outage
Amazon has made its first financial disclosures since the disastrous outage suffered by its cloud computing division that brought everything from smart beds to banks offline.In spite of the global outage, Amazon Web Services has continued to grow, and this quarter reported a 20% increase in revenue year over year. Wall Street estimated that AWS would bring in $32.42bn in net sales in the third quarter, with the company reporting actual revenue of $33bn.“AWS is growing at a pace we haven’t seen since 2022,” CEO Andy Jassy said in a statement accompanying the earnings report

Enhanced Games are dangerous and must be stopped, says Wada head
The head of the World Anti-Doping Agency (Wada) has called on the body’s American counterparts to act to stop the Enhanced Games, describing the new event – which allows athletes to take performance-enhancing drugs (PEDs) in competition – as “dangerous” and “irresponsible”.Witold Banka said the world’s anti-doping regimes had to be “very united” in their opposition to the Enhanced Games and said the United States Anti-Doping Agency (Usada) had a responsibility to push against it.
